Eating Well

Some of you already know, I’ve been living on my own for a few weeks already. I’ve learned that it’s not easy living with myself. I make a big mess and dirty lots of dishes. So, in an effort to control the situation, I’ve started cleaning up after myself! Wow, what a revolutionary idea! By the time Jenn returns, I think I might finally get the hang of it.

So as the title of the post suggests, I’m eating very well despite the lack of a full time cook. It’s difficult to cook, do laundry, clean, go to the gym, work a full day, and do all the other small things of life. I find myself rarely with time to sit and relax. On the upside, I’ve made some delicious meals. Since there was no one to share it with, I decided to take some photos and share it with the Internet community. Well, actually probably just a few friends and family that happen to visit this site.

Here’s some pork chops I brined overnight in a herb infusde maple syrup brine. It was extremely moist and savory. There are also potatoes, green beans and a salad. All from the organic, Live Earth Farm.

Usually I eat only one sandwich with potatoe chips. However, through our Community Supported Agriculture (CSA) program, I continue to get enough veggies for an entire family. So I had two sandwiches with a large salad!

Here’s my first attempt at baby back ribs. I picked these up from our local butcher, Poppy’s in Morgan Hill.

And finally, the end product. I made these Dizzy Pig style, Dizzy Dust, with a Pecan and Hickory chunk for smoke and spraying with the Apple Juice and Cide Vinegar mixture every half hour for a total of about 5 hours. Crispy, spiced and smokey bark with moist and tender meat. The meat wasn’t falling off the bone, but it was extremely close. I prefer a little bite to the meat. They were a big hit.
